No I am not Mexican but hey don't we all look for some reason to celebrate life and independence!? We actually didn't plan on having a Cinco de Mayo party, we just invited everyone over for dinner (and to help lay 2,700 square feet of sod in our backyard) on May 5 and then we realized it was Cinco de Mayo so we made the food have a little Latin flare (and included a lot of "Manuel" labor!)
Traci went on a mission to El Salvador so we told her she had to make us Pupusas one of these days and so this was finally the day. I know it is not really Mexican food but it is south of the boarder.
The pupusas were really good and I will definitely have to get the recipe from Traci and make them again. Traci said they could have been better but they tasted pretty good to us gringos; we all liked them. Pupusas are kind of like pizza pockets but with beans, rice, chicken, beef, cheese or whatever else you want to put in them. Then they are cooked on a grill or, Traci said, in El Salvador they cooked them over and open fire. Either way they are very good.
After eating, we headed over to Snow Canyon High School to listen to Tyler's jazz band concert. His band was really good and we were all jamming to the fun tunes they played. I miss playing in the band especially after listening to a concert. I especially miss playing the drums. I guess I will have to bring my drum set out of storage and start playing again...Uh maybe someday... We could have our own jazz band if we wanted to, I would play drums, Russell and Tyler on trombone, Traci on Sax, and someone else in Russell family plays trumpet but I can't remember who, all we would need is a guitar player which I am sure wouldn't be too hard to find. It would be fun but I doubt it will ever happen :(.
Anyway, after the concert we came back to our house to finish our Cinco de Mayo celebration with some dessert.
My Mexican Flag jello cake...VERY GOOD! One to make again but next time decorated as the American Flag with strawberries and blueberries.
We had a great 5th of May and Russell got all of our sod laid in our back yard! YEAH!! (Pictures to come soon...)
